Carefully started out as a one off, a batch of cheese made to satisfy our curiosity. This milled curd, British territorial inspired cheese is really fun to make, so we kept making it.

Our take on Caerphilly, a cheese favored by Welsh miners is firmer than it’s homophone across the pond, developing a flakier texture as it ages through a year.

Wheels are 10 inches in diameter and weigh about 14 pounds.
